Coffee is a serious thing around here. You gotta have the right beans, the right temperature of water, the right brewing method--exhausting. Coffee is Lang's job. He makes an awfully good cup.
Frankly, coffee is in two categories for me. I love the legit, serious stuff and I love the terrible gas station stuff-it's endearing and a good excuse to use a lot of cream. Delicious in a different way.
Ice coffee is different though. If you're going to have cold coffee, it's gotta be just right. And if you've tried to make your own, you've probably discovered that making ice coffee is hard! Reaching the appropriate coffee concentrate is a difficult task. And no, coffee ice cubes didn't work for me.
Luckily the Pioneer Woman has figured it out for us. Her iced coffee recipe is on point. Sweet Jack would make it all the time for us in the delta and it was our standby. The thing is, it makes a lot - like as in gallons. You would think it would be easy to par down the recipe, but it was kind of difficult. I had to whip out the ole algebra teacher skills and apply proportions and find the unit rate.
So here it is. It is honestly the best. Happy sippin; folks!
Iced Coffee
cheese cloth (can be found in the craft section)
1 1/3 cup ground coffee
2 quarts (8 cups) water
2 qt pitcher
sieve (preferably)
In a large bowl, preferably with a pouring spout, mix 1 1/3 cup ground coffee with 2 quarts of water (8 cups). Stir and allow to sit for 8 hours.
After 8 hours, drape the cheese cloth over the the sieve (or the mouth of the pitcher if you don't have one ) and slowly pour the coffee mixture so that the grounds are separated from the liquid. You'll probably need a buddy to help out with this step.
Drink over ice. I personally love adding almond milk and agave. And if you're feeling spontaneous, make some Bailey's ice cubes.

Oh Kate this is how we make our HOT Coffee in Honduras. I should get some and send them to you! I will email you a picture of them..... The best hot cup of coffee ever and now you could use them for Iced Coffee too. They are like coffee cones (not sure the spanish translation.
Kate, I am not even lying when I tell you this. As I was lying in bed last night watching bloopers from our favorite show (5 more days!!!), I was flipping through Ree's beautiful, brightly colored cookbook and saw the recipe for iced coffee. I asked Chad if he likes iced coffee. (His answer was yes) And I thought to myself that I should make a big batch at the beginning of each week so every morning I have some momma fuel at the ready.
Beware: I'm just getting more wordy (Like that even phases you anymore because that is me. All. The. Time) It geeks me out that you wrote about that this morning. I love you and that Lang of yours and can't wait to keep journeying together. Hopefully in the process we've all decided on for next year. (Hint, hint) But I totally think we need to have a coffee and breakfast date at your house one morning next week (I'll bring brekkie) so you can show me the iced coffee lay of the land. I'll even have the sweetest baby on the block for Auntie Kate snuggling and LeBron grabbing, er, I mean pettng.
