This is how I feel today.

I have no voice--no squeak, yelp or manly tone can escape my neck. So for all you sickos out there, this one is for you. Quick, easy, delicious chicken noodle soup.

Chicken (with-its-head-cut-off) Noodle Soup

Ingredients

1/2 c chopped onion
2 garlic cloves
1 c chopped celery
1 c sliced carrots
1 rotisserie chicken
5 cans (14.5oz) of chicken broth (10 cups)
2 c egg noodles (I use yolk-free)
1 t dried basil, 
1 t dried oregano
1 t thyme
1 t rosemary

2 Bay leaves
salt & pepper
Parmesan Cheese



Directions
In a large pot on medium-high heat, saute onion, celery, carrots and garlic using olive oil. Cook for about 5 minutes until tender. 

Meanwhile, remove skin and break apart the meat on the chicken. It should resemble shredded chicken. After the vegetables are ready, add broth, chicken, noodles and spices and bring to a boil. Once boiling, reduce heat and simmer for 20 minutes. Serve with parmesan cheese and our personal favorite- ritz crackers!

p.s. this also freezes well!
